feat: publish Mimir open core updates#27

Move new project scaffolding, docs, examples, app copy, and smoke coverage to the .mimir-first layout while preserving legacy .kb compatibility. Add opt-in image OCR and legacy Word extraction configuration, keep public open-source positioning explicit, and refresh generated dist artifacts for the npm package.
